En los últimos años, el creciente interés en la industria alimentaria por los β-glucanos provenientes de cereales se ha incrementado debido a los diferentes aportes a nivel funcional y de la salud. Este proyecto se enfoca en el uso del betaglucano de salvado de avena, avena molida y harina de cebada para desarrollar una bebida no láctea de valor agregado para brindar mayores opciones a la canasta familiar colombiana. Se realizó un diseño experimental con base a la teoría puesto que no existe una bebida en el mercado que contenga avena y cebada al mismo tiempo. Para cada corrida se determinó el contenido de betaglucano como variable de respuesta mediante kit enzimático Megazyme y un análisis sensorial con el que se determinó que la bebida con la siguiente composición (Mezcla sólida: 0,0404893, Agua: 0,939511 y Edulcorante: 0,02), donde la mezcla sólida se distribuyó de la siguiente manera (0,0238293 de Avena Molida, 0,00833 de Salvado de Avena y 0,00833 de Harina de Cebada) era la que cumplía con una alta cantidad de betaglucano y era aceptada sensorialmente. Características como la fermentación fueron claves para el proceso de conservación y la determinación de la vida útil de la bebida final. Se logró desarrollar una bebida con un contenido de betaglucano de 0.3050 g/100g bebida cumpliendo satisfactoriamente requisitos sensoriales, microbiológicos y fisicoquímicos con una vida útil de 14 días sin la adición de conservantes, apta para el consumo humano y como respuesta a mercados saludables de alta rotación y no para grandes cadenas.

In recent years, the growing interest in the food industry for β-glucans from cereals has increased due to the different contributions at the functional and health level. This project focuses on the use of beta-glucan from oat bran, ground oats and barley flour to develop a value-added non-dairy drink to provide greater options to the Colombian family basket. An experimental design was carried out based on the theory since there is no drink on the market that contains oats and barley at the same time. For each run, the beta-glucan content was determined as a response variable using the Megazyme enzymatic kit and a sensory analysis with which it was determined that the drink with the following composition (Solid mixture: 0.0404893, Water: 0.939511 and Sweetener: 0 ,02), where the solid mixture was distributed as follows (0.0238293 of Ground Oats, 0.00833 of Oat Bran and 0.00833 of Barley Flour) was the one that met a high amount of beta-glucan and was sensory accepted. Characteristics such as fermentation were key to the preservation process and the determination of the shelf life of the final drink. It was possible to develop a drink with a betaglucan content of 0.3050 g / 100g drink, satisfactorily meeting sensory, microbiological and physicochemical requirements with a shelf life of 14 days without the addition of preservatives, suitable for human consumption and in response to healthy markets of high rotation and not for large chains.
