About the Special Issue Editors Nikolaos Kopsahelis is a Chemist (University of Patras, Greece, 2003) with an MSc in Food Biotechnology (University of Ulster, UK, 2004) and PhD in Chemistry (Food Chemistry and Biotechnology, University of Patras, Greece, 2009). He is currently Associate Professor (Food Chemistry & Industrial Fermentations) at the Department of Food Science & Technology (Kefalonia Campus, Ionian University). His research focuses on fermentation technology in food (including agricultural products and wastes) chemistry and analysis, the biotechnological valorization of renewable resources, and in the development of novel biorefineries. He has participated as a member of research teams in 14 research projects funded by the EU, as well as National and private funds, and is currently involved in 7 research projects, where he is the coordinator in 3 of these projects. He has published 50 papers (mean IF > 5.6) in international peer-reviewed journals (>2200 citations), 4 book chapters, 2 patents, and has 68 publications in international and national conference proceedings. Vasiliki Kachrimanidou is an Agronomist/Food Scientist, graduated from the Department of Food Science and Technology in the Agricultural University of Athens. Her PhD thesis (Department of Food Science & Human Nutrition, Agricultural University of Athens) focused on the development of biorefinery concepts for the microbial production of poly(hydroxyalkanoates) and value-added products using byproduct streams from sunflower-based biodiesel production. She has worked as a postdoctoral research associate at the Agricultural University of Athens as well as the University of Reading, and is currently based at the Department of Food Science and Technology (Ionian University). Her research interests are focused on the development of integrated biorefinery concepts using agroindustrial waste streams and byproducts to generate value-added products towards the transition to circular economy.
