Abstract
El cacao es uno de los productos más comercializados en todo el mundo, ubicando a Colombia entre los diez principales países productores de cacao (Faostat, 2017). El cacao es reconocido por sus características organolépticas, sin embargo, los factores ambientales, zona de cultivo, maduración y el manejo de postcosecha definen la calidad del producto final. Una de las características más evaluadas es el estado de madurez ya que juega un papel importante en la recolección, fermentación y producción de chocolate, pero este parámetro presenta una gran variabilidad debido a que los patrones de desarrollo y maduración de cada material o clon no son homogéneos. En este estudio, se analizaron tres materiales genéticos de cacao (CCN51, EET8 e ICS60) de la región de Santander – Colombia, cada uno en 5 estados de madurez seleccionados por los cacaoteros de la región debido a su larga experiencia en el manejo de este producto evaluando parámetros fisicoquímicos como pesos de mazorca, semillas y cacota (cáscara), número de semillas, humedad de la semillas, almendras y mucilago, diámetro polar y ecuatorial, firmeza y color de la mazorca, pH, acidez y sólidos solubles totales SST (° Brix) del mucilago obteniendo los mayores resultados de los análisis realizados en los diferentes materiales y estados de madurez: peso mazorca (852.4 g, EET8, EM5), peso almendras (227.1 g, CCN51, EM1), peso cacota (634.0, CCN51, EM3), número de almendras (46, CCN51, EM2), humedad en semillas (60.04%, CCN51, EM2), humedad almendras (38.18%, EET8, EM1), humedad mucilago (84.92%, EET8, EM1), firmeza (6.46, Kgf, ICS60), diámetro polar mazorca (227,48 mm, CCN51, EM3), diámetro ecuatorial mazorca (102.97 mm, EET8, EM5), pH mucílago (3.91, EET8, EM5), acidez mucílago (1.76, EET8, EM1) y SST (° Brix) mucílago (11.50, CCN51, EM5). El análisis estadístico presentó significancias en los efectos analizados para algunos atributos físicos como peso almendra, humedad de semillas, diámetros polar y ecuatorial, Croma, Hue e índice de color y en atributos químicos como brix, pH y acidez observando cuáles son los efectos que más afectan el desarrollo del fruto a través del tiempo y con esta información determinar un lineamiento de calidad para conseguir un cacao con las mejores características y de mayor productividad para la industria del cacao; además de determinar que parámetro evolucionan a través del tiempo de maduración y encontrar criterios que los cacaoteros pueda aplicar en el campo para una mejor cosecha del cacao.

Cocoa is one of the most traded products in the world, placing Colombia among the ten-main cocoa producing countries (Faostat, 2017). The statistical analysis showed significances in the analyzed effects for some physical attributes such as almond weight, seed moisture, polar and equatorial diameters, Chroma, Hue and color index and in chemical attributes such as brix, pH and acidity observing which are the effects that most affect the development of the fruit over time and with this information determine a quality guideline to achieve a cocoa with the best characteristics and greater productivity for the cocoa industry; In addition to determining which parameters evolve through the time of maturation and find criteria that cocoa farmers can apply in the field for a better harvest of cocoa.
